Così Launches Licensing Model to Expand Catering Reach
Così Restaurant Holdings is bypassing traditional brick-and-mortar expansion by inviting independent foodservice operators to produce its signature menu items. The new Market Partner Program allows local cafés, delis, and caterers to integrate Così’s catering offerings into their existing kitchens without rebranding their own businesses.

David Polonitza, executive vice president at Così, described the move as a strategic evolution designed to broaden the company's footprint in new communities. According to Matthew Porter, the brand's director of operations, the program leverages existing infrastructure to minimize the overhead typically associated with restaurant expansion. Several locations are already active, with a new site preparing to launch in New Haven, Connecticut. The company is currently accepting inquiries from operators interested in integrating the catering model into their existing facilities.
